Emerson's Sunday Morning Gluten-Free Waffles

Megan and Emerson have a Sunday morning tradition of making gluten-free waffles. I'll put these up against any, including traditional waffles that contain gluten. I have included the recipe below. Enjoy, and please let us know your thoughts!


You will need the following ingredients for nine mini waffles:


- 1/2 cup almond flour

- 1/2 cup tapioca flour

- 1 tsp baking powder

- Pinch of sea salt

- 2 eggs

- 1/4 cup apple sauce

- 1 tsp vanilla extract

- 1 ½ tsp maple syrup

- 1 tbs melted butter (to brush onto the waffle iron)


Step 1:

- In a large mixing bowl, whisk together almond flour, tapioca flour, baking powder, and sea salt.



Step 2:

- Combine the dry ingredients from step 1 with the eggs, applesauce, vanilla extract, and maple syrup.





Step 3:

- Brush melted butter onto the waffle iron using a pastry brush.

- Spoon the batter onto the waffle iron.

- If using a mini waffle iron, cook for 1 minute and 15 seconds.

- Repeat the process to make all nine waffles.



Step 4:

- Serve with maple syrup, whipped cream, and berries.
